The audiovisual collection of the A*Midex university foundation Expérimenter l'avenir (I.e. "Experimenting with the future") aims to raise awareness of the research and training projects it supports. A first in Europe
Le Présage was the first restaurant concept in Europe where the energy required for cooking is produced locally, where part of the food production is integrated into the restaurant, and where the waste produced by its activity is recycled on site. The bioclimatically-designed building is located next to the IUSTI laboratory and the Ecole Polytechnique Marseille on the Château-Gombert site, providing a unique opportunity for academic, educational and industrial partnership.
CROCS - Restaurant Concept Optimized for Solar Cooking
Spearheaded by Benjamin Kadoch, a teacher-researcher at Aix-Marseille University, the CROCS collaborative project aims to develop an autonomous solar cooking system with heat storage for restaurants, overcoming the intermittent nature of this resource. To achieve this, an experimental bench comprising a Scheffler-type concentrating parabola and a furnace with heat storage were developed and modeled at the IUSTI laboratory.
In this video, we meet the players in this collaboration at the Technôpole de Château Gombert. They explain how this new technology can be used to optimize the prototype developed by this pioneering restaurant, and present the advantages of working together towards a common goal.
